Pistachio Cookies

I take a math class on Tuesday’s so I can renew my teaching certificate. I sit with a great group of ladies, we all take food to share with each other. It’s the only thing that gets me through the class. For yesterday I decided to take some cookies but didn’t want to take the time to make them from scratch.

If I’m going to be honest with you, I don’t like making cookies. For some reason I have it in my head they take too much time.

Start with a white cake mix. That’s pretty easy right.

A couple eggs.

It’s fun to watch my oldest figuring out the world. A couple is two mom. Yes, yes it is.

A package of pistachio pudding. I wanted these to be green for St. Patrick’s day. Yeah it’s taken me a while to put these on.

You’ll need some oil too.

Green food coloring is optional if you want your cookies to be greener.

Almond extract to enhance the flavor. Optional if you want a stronger flavor.

Mix it until it looks like that. Like play dough. Pinch off about an inch ball and roll it. Then bake it.

It should come out like this. If not I’m not sure what to tell you, sorry.

Pistachio Cookies

1 white box cake mix

1 3 oz. box instant pistachio pudding mix

2 eggs

1/2 cup vegetable oil

3/4 teaspoon almond extract, optional

Green food coloring a few drops

Preheat oven to 350 degrees.

Mix together all ingredients until stiff. Roll into 1″ balls. Bake 10-12 minutes or until cookies are light brown. Then enjoy.
