My birthday was on Tuesday and I decided I needed to make something fancy for breakfast. I had been toying with this recipe trying to get it right and decided to give it another try. I also wanted something healthier because I knew the rest of the day was going to be blown on cupcakes, cake, and large hamburgers.
Who wouldn’t love coconut pancakes with pineapple syrup? Ok, people who don’t like coconut but I am not one of those people.
Remember snow balls? I loved those. I would save the marshmallow coconut part for last so I could savor it.
Maybe I should figure out how to put marshmallow’s with the cupcakes. Ok, I won’t go that far.
Pina Colada pancakes
1 1/4 cup whole wheat flour
1 cup buttermilk
1/2 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons oil
1/4 cup applesauce
1/2 cup unsweetened coconut
1 1/2 teaspoon coconut flavoring
1/4 cup apple juice
1 20 oz. can crushed pineapple
4 tablespoons Ultra Gel
Combine flour, coconut, baking soda, and baking powder. Then combine buttermilk, egg, oil, applesauce, and apple juice. Slowly pour wet ingredients into dry ingredients. Let sit for a few minutes before pouring on to griddle. Cook until batter no longer bubbles then flip until pancakes are cooked through the middle.
Combine crushed pineapple and Ultra Gel and mix until smooth and thick. Pour on top of cooked pancakes.
