Mustard Poppy Seed Dressing

I have spinach and lettuce growing in my garden and it’s start to come out of my ears. Well not really coming out of my ears. But I do have several bags of spinach in my freezer waiting to be put in smoothies. I decided it was time for a salad.

I love having salads for dinner, it makes a light meal to end the day with. Depending on what you put on it though. This one was really good with all the fixings!

Mustard Poppy Seed Salad

(for this recpe I’m going to just tell you what I put on my salad. You can decide the quantity based on your needs)

Spinach

Lettuce

Olives

Mandarin Oranges

Raisins

Grilled Chicken

Mozzarella cheese or Swiss cheese

Mustard Poppy Seed Dressing

3/4 Tablespoon poppy seeds

1/3 cup white vinegar

3/4 cup oil (canola or olive oil, I used olive oil)

1/3 cup sugar

1 tablespoon dried onion

2 tablespoon prepared mustard

3/4 teaspoon salt

Combine all ingredients and pour over salad.
