Chicken Linguine

This is my husbands all time favorite dish I make. I found the recipe when we were first married and 8 years later I’m still making it for him. I’ve made it healthier over the years but you can make it however you want.

Chicken Linguine

1/4 cup butter (can substitute olive oil)

3 Tablespoons flour

2 teaspoons crushed garlic

1 teaspoon pepper

2 1/2 cups milk

1 8 oz cream cheese, cubed

1 cup Parmesan cheese

12 ounces uncooked linguine (I use whole wheat)

3 cups cubed cooked chicken


In a saucepan, melt butter. Stir in flour, garlic and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; add cream cheese and parmesan cheese. Cook and stir for 8-10 minutes or until cheese is melted.

Meanwhile, cook linguine according to package directions. Add chicken to cheese sauce; cook 5 minutes longer or until heated through. Drain linguine; top with chicken mixture.

I used whole wheat flour in my sauce that’s why the picture looks a little flaky. Now that I have my old recipe binder out I should look to see what else is in there that might be good for dinner.
