This is my version of a pinterest recipe. Does it look as amazing as the pinterest one did? No, but it was really yummy and I say that is better than looks.
It’s what’s on the inside that counts right? And on the inside of this s’more is peanut butter, chocolate, and marshmallows. Marshmallows are my weakness. In fact we love them so much at our house my middle child carries a bag around with her at the grocery store. She can be heard repeatedly saying “I love marshmallows.” That’s how much we love marshmallows here.
Peanut Butter Cup S’more Bars
Adapted from The Recipe Critic
1/2 cup butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
1 teaspoon vanilla
1 1/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup peanut butter
1/2 cup chocolate chips
1 1/2 cup marshmallow fluff (basically a whole jar)
Preheat oven to 350 degrees. Grease 8×8 pan.
Preheat the oven to 350 degrees. Line a 8×8 pan with parchment paper and spray it with cooking spray.
Combine butter, sugar, and brown sugar. Beating until fluffy. Beat in egg and vanilla until incorporated.
Stir in flour, baking powder, and salt until combined.
Spread 2/3 of dough on the bottom of baking pan. Spread the peanut butter on top (this is a little tricky just do your best). Sprinkle the chocolate chips on top of the peanut butter. Spread the marshmallow fluff on top.
Press the remaining dough onto a non stick surface into an 8×8 square and lay on top of the marshmallow fluff and press lightly. Or you can press it into flat pieces and lay it on the marshmallow fluff trying to cover the marshmallow fluff as much as possible. Then while it bakes the marshmallow fluff oozes out and becomes crispy which I personally liked.
Bake for 25-30 minutes of until the edges brown. Allow them to cool 2 hours. (Or wait as long as you possibly can and then cut them open and devour them which is what I did)
