Wheat Free Pumpkin Waffles

I should have a disclaimer on these waffles, they have pumpkin in them but they don’t taste pumpkiny. You can substitute the pumpkin for applesauce or bananas if you choose.

My sister in law has allergy problems and some asthma problems. She is trying to go off of dairy and gluten. Which I think is very admirable! Unfortunately these waffles aren’t dairy free but they don’t include any wheat. Although they do include spelt which is a close relative to wheat. Does spelt have gluten? I haven’t researched the gluten free diet very well. I dedicate this recipe to my sister in law and her food journey!

Wheat Free Pumpkin Waffles

1 cup buckwheat flour

1 1/2 cup spelt flour

2 cups buttermilk (this could be swapped with coconut milk or almond milk)

2 eggs

1 teaspoon baking soda

2 teaspoons baking powder

1/4 cup oil

1/2 cup pumpkin

1/2 teaspoon salt

2 teaspoons cinnamon

Mix all ingredients together until the batter is smooth and runny. Pour into hot greased waffle iron. Bake until brown.

Top with whatever you want. I enjoyed the blueberries and bananas with syrup. I also do applesauce and jam. Sometimes I just pop a can of peaches and put those on top (I can my own so they are very delicious).
