Nacho Chicken

For my family’s first family reunion we decided to rent a house for a week. Everyone had to make all the meals one day that week. I got lucky and the community we were staying in had their annual BBQ dinner on my day so I got out of cooking dinner. Which would have been nachos. I was looking for something easy and that the kids would eat. That was my criteria. Did I mention I also lucked out on lunch? We ended up having so much food we needed a left over meal which turned out to be my lunch. The only thing I had to make that day was breakfast which was a pancake bar.

To make my meal easier I made this yummy chicken before hand and then froze it. If I would have needed it then I wouldn’t have needed to worry about dishes. That was my goal. Instead the day we got back from the reunion I made nachos for our dinner. It really was fantastic. I’ve also made burritos with the chicken too. I actually just take a fork to the chicken and eat it out of the bowl.

The best part is, it’s easy to make!

Nacho Chicken

2 skinless, boneless chicken breast halves

1 (4 ounce) can tomato sauce

1/4 cup salsa

1 (1.25 ounce) package taco seasoning mix

1 teaspoon ground cumin

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon Sriracha hot sauce (more or less to taste)

Boil chicken until cooked and easily shredded with fork. Drain water from chicken. Add the rest of the ingredients to the shredded chicken. Enjoy!
