Peaches and Cream Cupcakes


I made these for a summer BBQ at the lake a few minutes from our house. My brother and his family came around and we all went up to spend some time in the sun and enjoying the freezing water. The water was so cold my youngest was shivering, I made her get out and play in the sand for a while just to warm up. My girls and I had a lot of fun! It was nice to hang out with my brother and his family who lives far away and we don’t get to see all the time.

I had some peaches I needed to use up and these cupcakes just tasted like summer.

Peaches and Cream Cupcakes

1 white cake box mix

1/2 cup plain yogurt

3/4 cup peach juice (just used the juice from the canned peaches)

3 eggs

1/2 cup oil

1/2 cup canned peaches cut into small chunks

Preheat oven to 350 degrees.

Combine all ingredients except the canned peaches and mix until everything is incorporated. Put canned peaches into batter and mix with a spoon. Spoon into muffin tin until 3/4 full.

Bake for 18-20 minutes or until golden brown and they spring back when touched.

Vanilla Buttercream

1/2 cup shortening

5-6 cups powder sugar

2 teaspoons clear vanilla

4-6 tablespoons milk (add more if the desired consistency isn’t reached.)

Cream all ingredients together and beat until desired consistency is reached. Pipe onto cupcakes and garnish with fresh peach.
