Zapple Crisp

I got this idea from a friend and decided to try it out! It’s apple crisp made from, you guessed it, zucchini! I looked around the web for ideas on how to do this one and every blog said the same thing, no one will ever know it’s zucchini. They’ll all swear it’s apples. I have to admit, I didn’t know and my parents didn’t know. My husband was suspicious and wouldn’t try it. I did have a hard time swallowing even though I couldn’t taste the zucchini. It’s really just the thought. Here’s the lesson I learned on this recipe:

Don’t tell anyone it’s zucchini until it’s all gone.

That’s my word of advice.

Here is my zucchini ready and waiting. Oh, and peeled.

I cut most of the seeds out. I just didn’t want seeds in there reminding me that it wasn’t really apples.

Here she is all cut up.

I cooked the zucchini until it was soft in some apple seasoning. I didn’t cook mine long enough so it was a little crisp. I suggest turning it on a medium low heat and let it do its thing until it’s nice and soft.

I didn’t use enough zucchini but in the end it all worked out fine.

Here’s the topping all ready to go.

Throw the topping, well, on top. and you have it all ready to go into the microwave. That’s right, the microwave. Not the oven. Since you already cooked the zucchini just throw it in the microwave for 5 minutes and you’re done.

Put some whip cream on top and you’ve got dessert!

ZAPPLE CRISP

4 cup zucchini

1/4 cup lemon juice

1/2 cup apple juice (I’d start with 1/2 cup and go up if you need more)

1/4 cup sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

Combine all ingredients in a medium pot. Cook until the zucchini is soft. Put in a microwave safe 8×8 or 9×9 pan. (I shouldn’t have to remind you to make sure it isn’t metal)

Topping

1/2 cup brown sugar

1/2 cup flour

1/2 cup oatmeal

1 teaspoon cinnamon

3/4 teaspoon nutmeg

1/4 teaspoon ginger

1/4 cup soft butter

Combine all ingredients until they make a crumble topping. Pour on top of soft zucchini. Cook on high in the microwave for 5-10 minutes or until topping is soft.  Serve with whip cream or ice cream.
