Chocolate Chip Zucchini Bread Pancakes

What makes any pancake better? Chocolate chips of course. It’s my husband’s favorite type of pancake. I don’t make them very often because I just think breakfast should be healthy and chocolate chips usually don’t fall into that category. Maybe I’m wrong though. They keep coming out with studies saying how chocolate is healthy for you. Maybe I’ve been wrong to keep them away from my husband all these years.

I’ve got a lot to ponder.

These pancakes are light, fluffy and hey they have zucchini in them! Maybe a vegetable for breakfast negates the syrup.


1 1/4 cups whole wheat flour

1 cup buttermilk (milk with 1 tablespoon vinegar is how I make mine)

1 egg

1/2 teaspoon baking soda

1 teaspoon baking powder

2 tablespoons oil

1/4 cup applesauce

1/2 cup shredded zucchini

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 cup chocolate chips.

Preheat skillet or griddle.

Combine all ingredients except the chocolate chips. Mix everything together until blended, batter will be chunky due to the zucchini. Pour batter on hot skillet or griddle. Place chocolate chips on the pancake. Wait until the pancake no longer bubbles and flip when golden brown. Enjoy!
