Pumpkin Zucchini Bread


I found this recipe in my recipe binder. I hadn’t made it for a long time and I had quite frankly forgotten about it. Do you have recipes like that? You like them you just forgot how much and you were blinded by the gorgeous pinterest pictures. That’s what happens to me. Those glorious pictures on pinterest lure me into making those recipes instead of looking in my own recipe binder for those long lost friends who used to be buddies with me.

This was a really great bread. Delicious!


3 eggs, lightly beaten

1 cup sugar

1 cup canned pumpkin

1/2 cup butter or margarine melted

1/2 cup applesauce

3 cups whole wheat or all-purpose flour (I used whole wheat)

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1 cup shredded zucchini

1 cup chopped walnuts (optional)

1 cup white chocolate chips (optional, but completely delicious)

Preheat oven 350 degrees.

In a mixing bowl combine eggs and sugar. Add pumpkin, butter and vanilla.

Combine all dry ingredients and add to the wet mixture. Stir in zucchini, nuts, and chocolate chips. Pour into two greased 9×5 loaf pans.

Bake for 45-50 minutes or until bread is golden brown on top or knife comes out clean. Cool in pans for 10 minutes. Remove them from pans and put on wire racks.
