Chocolate Pumpkin Cupcakes

It was our second annual zombie night a few weeks ago. I was jazzed about it, as in using my jazz fingers and dancing around to spooky Halloween music. I had the whole night planned out. I ended up being busy that day so the cupcakes kind of ended up on the back burner. Man! Lame.

I made our zombie dinner.

Zombie ziti, deviled eyes, intestines, and zombie teeth. Plus for a drink we had brain juice. Here was last years post. I like the zombie ziti, It’s easy to make and delicious. The brain juice was just apple cider. By the time I got done making and cleaning dinner it was getting late. We popped a movie in and then I finished the cupcakes. When I was finally done so was the movie. Between cleaning and making the cupcakes it took the whole time. My husband made the zombie snot (green caramel popcorn) which the kids loved.

The middle had a pumpkin filling that tasted like a pumpkin pie. Our family enjoys celebrating Halloween all month long. This weekend we are having witches night. I can’t wait!

CHOCOLATE PUMPKIN CUPCAKES

CHOCOLATE CUPCAKES

1 box chocolate cake mix

1/2 cup plain yogurt

3 eggs

1/4 cup oil

1/2 cup milk

Preheat oven to 350 degrees.

Combine all ingredients and mix until incorporated. Bake for 18-20 minutes or until cake springs back when lightly touched.

Let cool on wire rack.

FILLING

1 cup pumpkin puree

1/2 cup sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

CHOCOLATE FROSTING

3/4 cup cocoa

4-5 cups powder sugar

1/2 cup Crisco

7-8 Tablespoons milk

Combine all ingredients with a hand mixer. You may need to add more or less milk. I tend to add about 7-8 tablespoons but you may need less or more. I’d start with 4 and then add my way up. For a darker chocolate taste add more cocoa.
