One of my good friends had a birthday on Sunday. I asked her what kind of cake she was having, store bought or homemade. Nothing. She didn’t think anyone was going to make her anything. That is a crime in my book. Everyone deserves a dessert for their birthday. Something! You should always get something for your birthday and if you have a birthday where no one is going to do anything for you, let me know, I’ll make you something. I made her marble boston creme cupcakes for her birthday.
My husband loved it! He ate a lot of them! I took them to her while he was at work and when he came home he wanted to know what happened to the rest of the cupcakes. He then got the horrible news that I didn’t make those for him, I made them for my friend. Disappointment was written all over his face.
But it won’t be written on yours when you make these great cupcakes.
MARBLE BOSTON CREME CUPCAKES
1 box marble cake mix
1/2 cup plain yogurt
1/2 cup oil
Preheat oven to 350 degrees.
Combine all ingredients and make according to box instructions. Line two cupcake pans. Pour white batter in first, spoon chocolate batter over white and stir with toothpick. Bake for 18-20 minutes.
1 box vanilla pudding
1 tub cool whip
1 cup milk
Combine pudding and milk. Whip until thick. Add cool whip, and stir until combined. Refrigerate until cupcakes are cool.
CHOCOLATE BUTTERCREAM FROSTING
3/4 cup cocoa
4-5 cups powder sugar
1/2 cup Crisco
7-8 Tablespoons milk
Combine all ingredients with a hand mixer. You may need to add more or less milk. I tend to add about 7-8 tablespoons but you may need less or more. I’d start with 4 and then add my way up. For a darker chocolate taste add more cocoa.
When cupcakes are cool cut center out. Fill with filling replacing the top of the cut center. Pipe frosting on. Enjoy!
