I love soup. I think it’s no surprise to anyone. Really what could be better? You get beans, vegetables, and meat all in one easy dish that is delicious. Unfortunately I think I’m the only one in my family who likes soup. Everyone else just seems to suffer through it. Unfortunately for them, I cook, which means I make what I like and sometimes what they like.
CHICKEN TORTILLA SOUP
2 boneless skinless chicken breasts cooked and shredded.
2 cloves garlic
1 medium onion finely chopped
1 can red enchilada sauce
1 tablespoon chicken bouillon
1 teaspoon ground cumin
1/4 teaspoon ground cayenne pepper
1 10 ounce bag of frozen corn or 1 can corn drained.
1 medium carrot shredded
1 can kidney beans undrained
1 can black beans undrained
Combine all ingredients in slow cooker or pot on stove. Cook with the slow cooker until heated through on low 2-3 hours. Cook on stove for 30 minutes or until heated through.
Top with cheese, sour cream and eat with the tortilla chips. You can opt to eat it just plain which is good but it’s fantastic with all the fixings.
