Leprechaun Smoothie

The leprechaun came. It’s a huge deal at our house. Here’s why. By the time Santa comes I am so exhausted from all the holiday events I just want Santa to come and leave and let me sleep for a copious amount of time. I am not thrilled but I push through and get it done. By the time the leprechaun comes, I am excited again. I haven’t had a holiday for a month and I don’t go crazy for Valentines day. I’m rested and relaxed, I haven’t gone through weeks of parties and activities. Seriously, after Thanksgiving we have a birthday, an anniversary, Christmas, and New Years all basically one week from each other and that’s not mentioning all the parties and dinners and family things. I love it but am overwhelmed by it.

Anyway when we finally reach St. Patrick’s day I’m ready for some fun. I dye almost everything green, buy some gold coins and lucky charms. Which as a side note I truly and utterly HATE! I have banned them from our house. Never is my husband allowed to by them and I’m pretty sure the leprechaun falls in the same category. All the kids eat are the marshmallows and I end up throwing out perfectly good cereal, waste of money.

I am seriously ranting on this post.

Back to the smoothie. The leprechaun made a green smoothie for lunch. Mainly because the leprechaun had kale which the leprechaun had no idea what to do with it. The leprechaun’s sister suggested this smoothie. The leprechaun listened to her sister and made this smoothie and was utterly surprised by the fact that it was amazing. The awesome part, the kids devoured it! Yay for healthy!

On a side note am I the only one who reads utterly and thinks of cows?


2 leafs of kale

1 1/2 to 2 cups frozen pineapple

1 orange, peeled

4 tablespoons (or more depending on taste) of frozen concentrate orange juice or orange pineapple juice (anything in the orange category that’s 100% juice)

1/4 cup milk (or more)

1/4 teaspoon bee pollen (I add this for an extra health kick, if you don’t have any no worries just leave it out.)

Dump everything in the blender and liquify adding more milk and orange juice if needed to get the smoothie to the desired consistency. Enjoy!
