Winter is almost over! I’m very excited. Here in Idaho February and March have the most amazing sunsets. They are gorgeous. I love looking out my back window and watching the sun sink below the horizon reflecting orange, purple, and pink on the clouds.
Recently I have discovered granola. I’ve been eating it every morning for at least a month. We also bought frozen yogurt, I put some on it. Delicious. Also fantastic on vanilla yogurt. My girls eat it up and ask for seconds.
4 cups rolled oats
1 1/2 cups raw slivered almonds (or other nuts, I added sunflower seeds)
1/4 teaspoon cinnamon
1/2 cup olive oil (or coconut)
1/2 cup honey
1/4 teaspoon vanilla
1/4 cup flax seed
Preheat oven to 350 degrees.
Combine all ingredients except honey, olive oil, and vanilla.
Stir in honey, oil, and vanilla. Pour onto cookie sheet. Bake for 20-25 minutes turning halfway through baking time. The granola will turn lightly golden brown and crisp up as it cools.
Cool the granola before putting it in an air tight container for 1 to 2 weeks. Freeze for longer shelf life.
