With a full time job the last few weeks I have been trying to find some easy dinner recipes. I really don’t want to come home and make a fancy meal when I’ve only seen my daughters for a few minutes. This was an easy recipe I could throw in the oven and forget about it. Along with a potato and dinner was ready, plus a vegetable of course. I miss those days when I could plan dinner at noon and start making it at three in the afternoon. Instead I’m grading papers at three in the afternoon, making sure I have everything ready for the next day.
This is a great recipe that fits into my clean eating regiment. I attempt to eat clean and I notice a difference in my life with it.
HONEY SRIRACHA CHICKEN
adapted from bohlogging
1/2 cup orange juice1 tablespoon sriracha, more or less depending on your preference
1 small diced onion
1 teaspoon honey
1/2 teaspoon salt
6 chicken legs or whatever type you prefer
2 teaspoons sesame seeds
Preheat oven to 400 degrees.
Mix everything together beside the chicken and sesame seeds. Taste and add more honey or sriracha if needed.
Put chicken in bag and fill with the sauce to marinade overnight or however long you have time for.
