No Bake Cheesecake

IMG_2402This has been a birthday favorite for years now. Probably 20 years for all my siblings birthday we would have this. My mother rejoiced when she no longer had to make fancy cakes for us. It’s my brother’s favorite. He prefers it over cake. Of course we all love it because we always request it.

We add cherries, my personal favorite. You can add any type of fruit topping. We’ve done blueberry, raspberry, strawberry, apple. The best is cherries but that’s my own personal preference.

2 8 oz. cream cheese room temperature
1 cup powder sugar
1 container cool whip
1 package graham crackers
4 tablespoons butter

Combine graham crackers and butter in a food processor. Grind until course with no large lumps. Bake for 5-10 minutes in the over to melt the butter. Be careful not to burn the graham crackers.

Combine cream cheese and powder sugar. Blend with hand blender until smooth. Stir in cool whip.

Pour onto graham cracker crust. Chill at least 2 hours before serving. Add any fruit topping.
