Coconut Granola

IMG_2408Welcome to my latest obsession. I mean, obsession! I’ve been eating it every morning until it runs out and then I grudgingly eat something else instead.

If you want your morning breakfast to stick with you until lunch this is it! It’s never let me down.

Seriously this stuff is amazing. Double the recipe so it lasts you longer, you won’t be disapointed.

COCONUT GRANOLA

4 cups rolled oats
1/2 cup coconut (I use unsweetened)
1/2 cup coconut oil
1/2 cup honey
1/4 cup flax seed
1/4 cup chia seeds.

Preheat oven to 350 degrees.

Combine all ingredients except honey, and coconut oil.

Stir in honey, and oil. Pour onto cookie sheet. Bake for 20-25 minutes turning halfway through baking time. The granola will turn lightly golden brown and crisp up as it cools.

Cool the granola before putting it in an air tight container for 1 to 2 weeks. Freeze for longer shelf life.
