Whole Wheat Zucchini Bread

When you have zucchini coming out your ears and you need to make something here is a great healthy zucchini bread. Pictures will come later. This recipe makes two loaves cut it in half to only make one. It isn’t a really sweet bread if you want it sweeter add some more honey.

1 1/2 cups low fat milk

4 large eggs

3/4 cup honey

1/3 cup canola or olive oil

1/3 cup applesauce

2 teaspoons vanilla

4 cups shredded zucchini

4 cups white whole-wheat flour (I used regular whole wheat and it worked out)

4 teaspoons baking powder

2 teaspoon ground cinnamon

1 teaspoon salt

1 cup chocolate chips

1/2 cup walnuts (optional)

Preheat oven to 350 degrees F. Spray 2 9×5 loaf pans.

Combine milk, eggs, sugar, oil, applesauce, vanilla in a bowl. Stir in zucchini. Combine flour, baking powder, cinnamon, and salt in bowl. Add wet ingredients and chocolate chips to the dry ingredients. Stir until incorporated. Pour into prepared pans.

Bake until golden brown and tooth pick comes out clean. Cook 50 minutes to one hour. Let cool at least an hour before cutting.

Store at room temperature for up to 2 days or freeze up to 3 months.
