Oreo Cupcakes

So I recently had a cupcake demonstration to do for a church function and I made two cupcakes people could put together themselves. The first is an Oreo cupcake and the second was a rolo cupcake. This is my sisters favorite cupcake to make and I had never made them before so I decided I would go for it.

Start out with a white cake mix. Easy right.

Next I add some yogurt.

Next I added three eggs.

I added one cup Oreo crumbs. I just threw my cookies in my mini food processor. This was about six cookies.

Some oil, now I forgot to add this when I was making the cupcakes for my demonstration. That’s what I get for not having a recipe in front of me.

I added 1/2 cup of milk but really it should have been 3/4 cup, it left it a really dense cupcake. If that’s your thing then you’re good.

Here it is all blended up.

And then they’re magically done. I wish that’s how it worked. My life would be easier and my kitchen would be cleaner.

Oreo Cupcakes

Ingredients:

Oreo Cake:

1 white cake mix

1/2 cup fat free plain yogurt

3/4 cup milk

3 eggs

3/4 cup oil

Preheat oven to 350 degrees F.

Combine all ingredients and blend with hand mixer. Spoon into muffin tin with paper liners or sprayed. Fill to 3/4 full. Bake for 18-20 minutes or until cake springs back when lightly touched.

Filling:

1 8 oz. package cream cheese

1/2 cup powder sugar

2 cups cool whip

1/2 cup Oreo cookies

Bring cream cheese to room temperature. Mix cream cheese and powder sugar together. Put in the cool whip and Oreo cookies and combine. Cut the cupcake into a cone and fill replacing the “lid”.

Frosting:

1/2 cup shortening

4 cups powder sugar

1 cup crushed Oreo’s

6-8 Tablespoons milk

Combine shortening and powder sugar and mix, add milk until desired consistency is reached. Add in Oreo crumbs and mix until combined. Pipe onto cupcakes.
