Pina Colada Cupcakes

I was in charge of desert for a young woman activity in my church. The theme was Sparkle and Shine! I love that theme. Just makes me happy. The colors were yellow and white and in the middle of Winter it felt bright and cheery. A nice change to the cold outside. I needed to come up with desserts that fit around the colors. I decided the strawberry pina colada cupcakes would be great except without the strawberry frosting.

I actually didn’t get to try one. It was pretty sad for me but I only made 40 desserts in all and I needed every one for the activity. There were no samples to spare.

Coconut cake with a pineapple filling and coconut frosting to top it off.

Coconut cupcakes:


1 white box cake mix (I used funfetti, it’s all I had)

1/2 cup plain yogurt

3/4 cup coconut milk

1/3 cup oil

3 eggs

1 Tablespoon coconut flavoring

Preheat oven to 350 degrees. Makes 24.

Beat all ingredients together. Fill tins 3/4 full. Bake for 18-20 minutes or until golden brown.

Pineapple Filling:

1/2 Cup sugar
4 Tablespoon flour
1 egg
1 Cup crushed pineapple, drained
1/2 Cup pineapple juice
2 Tablespoon butter
Over medium heat, combine all ingredients (except butter) and stir constantly until thickened. Remove from heat and stir in butter, let cool completely.

Cut a hole in your cupcake and add filling.

Coconut Buttercream:

1/2 cup shortening

6 cups powder sugar

3 teaspoons coconut flavoring

1/4 cup milk

Combine all ingredients besides milk. Beat ingredients together adding milk slowly until desired consistency.

I bought the sparkles at Micheals and they looked great, made the cupcakes shine.

Here they are at the activity all ready to be eaten.
