Cowboy Potatoes

Two years ago a good friend of mine had a baby, the same day as my oldest was born! I took her dinner after she got home and yesterday she asked me for the recipe, telling me her kids loved it. Well, here it is. It’s a really easy dinner to throw together, as easy as hamburger helper.

Cowboy Potatoes

1 lb hamburger

1 medium onion

1 Tablespoon brown sugar

1/2 cup ketchup

1 can cream of chicken soup (no water)

1 tablespoon mustard

1 tablespoon vinegar

Sour cream (optional)

Cook hamburger and onion together until brown. Add soup and the rest of the ingredients. Cook for a half hour. Serve over baked potatoes and top with sour cream.

    I ended up just adding sour cream to bbq sauce and my kids ate every bit. But I’ll try yours next time for sure.
