Creamy Chicken and Wild Rice Soup

I love soup, it’s not secret and this soup hit the spot on a cold winter’s night. It would have been better during our really cold streak of below zero weather, back when I was stuck inside with the kids with no where to go because the car wouldn’t start due to how cold it was. I can’t wait for a garage. This soup would make any freezing or mildly freezing day better.

Creamy Chicken and Wild Rice Soup

2 cups wild rice

2 Tablespoons chicken bouillon (more or less depending on personal preferences)

2 teaspoons onion powder

2 teaspoons garlic powder

1/4 cup parsley flakes

1/4 teaspoon thyme

6 1/2 cups water

1 pound diced chicken

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 cup flour

1/2 cup olive oil

2 cups half and half (I used 1 cup half and half and 1 cup 1% milk)

1 cup grated carrots

1 cup diced celery

Combine all ingredients in crock pot. Cook on low for 7 hours or high for 5 or until rice is done.
