Oatmeal Strawberry Bars

Winter seems like it’s on it’s way out but it still lingers on. Not that I’m complaining too much because out of all the seasons, Spring is the worst. One day it’s warm and you can play outside without any coats. You’re frolicking around enjoying the splendor of Winter leaving. The next day you think to yourself that it was so great the day before you should pull out your capris. You put on your capris and realize how much you’ve missed them and how great they look and feel. Then you open the blinds to look outside and instead of seeing birds chirping on green grass and budding trees you see a snow storm.

You kiss your capris goodbye and hunker down in your sweater for another day or week.

Yeah, I hate Spring. It toys with your emotions.

What does this have to do with oatmeal strawberry bars? Nothing.

Just lamenting that fact that Winter has it’s hooks dug in deep and you might need some comfort food right about now.

These oatmeal strawberry bars might just bring you some of that comfort you’re looking for.

Oatmeal Strawberry Bars

1/2 cup butter (I used Smart Balance Light)

1 1/2 cups whole wheat flour

1 1/2 cups oats (quick or regular doesn’t matter)

1/2 cup honey

1 teaspoon molasses

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup applesauce

1 jar 10-12 oz. strawberry jam

Preheat oven to 350 degrees F. Grease a 9×13 pan.

Combine all ingredients except strawberry jam. Divide mixture in half. Spread half of mixture on the bottom of a 9×13 pan. Poor strawberry jam on top. Spoon dollops of the remaining mixture on top of strawberry jam.

Bake for 30-40 minutes.
