These are my go to muffins when I’m in the mood for muffins. they are just fantastic without being too over the top or sweet. I usually eat way to many of them but they are so very yummy.
Start out with some oatmeal. Of course! Quick oats.
Add some buttermilk.
Have your five year old crack the egg for you and add it to the oatmeal and milk.
I actually doubled this recipe so I could freeze some and pull them out when the hankering for muffins hit me. Next have your daughter hold the pretty much empty bottle of molasses upside down and wait for enough to poor out. Good lesson on patience.
Add some oil. If you can’t tell from this picture my daughter had a lot of fun with the molasses making all sorts of pretty designs on the eggs.
I used honey in this recipe. I wanted a natural sweetener.
Then add some whole wheat flour
And then magically they just turn into muffins. Oh the magic of pictures.
1 cup quick oats
1 cup buttermilk
1/4 cup honey
1 teaspoon molasses
1/4 cup vegetable oil
1/4 cup applesauce
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soad
Preheat oven to 400 degrees.
Mix all ingredients together and spoon batter into greased muffin tin 2/3 full. Bake for 15-20 minutes.
